When should I use my own STUN/TURN server, and when is it fine to use the Google STUN server?

I am building an application using Ant Media Server that will allow anyone to watch and anyone to publish.

I am trying to understand whether I need my own STUN and/or TURN server, or if it's OK to use the Google STUN server. So far in my testing (using the Google STUN server) it has worked fine for everyone..

I understand that for specific scenarios (e.g. when Google is blocked, or for an intranet with no external access) there is no choice but to have your own STUN/TURN server, but I would like to better understand when it is appropriate to have your own STUN/TURN server when the Google STUN server can be reached.
